Lime, White Chocolate and Raspberry Cheesecake



 



 

Ingredients:

75g (2.5oz) Butter

Small Packet (app 200g (7oz) Digestive/similar biscuits

2 tbsp Golden Syrup

200g (7oz) White Chocolate (good Quality)

200g (7oz) Cream Cheese (philli etc)

500ml Double Cream Whipped

2 Eggs (Separated)

1 lime Zest and Juice

1 Small Punnet Raspberries







Method:





1- Crush the biscuits, a food processor does this quickly, I usually just bash them in a bag with a rolling pin.
2- Melt golden syrup and butter in a pan. Next add the biscuits stirring to ensure an even coating. 3- Spoon and press the biscuits into a standard sized cheese cake tin.
4- Melt chocolate in microwave or in bain-marie, leave to one side in order to cool.
5- Take a-few spoonfuls of the melted chocolate and spread a thin layer onto the crushed biscuits. Place tin in fridge to set.
6- Separate eggs, using electric beaters whip up the egg whites (to soft peak stage). Yolks can be kept and used to make a small batch of lemon curd, to enrich pasta sauces or a deep golden glaze for pies/pastries/baked goods. 
7- In a large bowl soften the cream cheese. In another bowl whip up the cream. Add the chocolate, lime rind and juice to the cream cheese. Stir together. Next add the cream, lightly mixing in by hand. 8- Fold in egg whites gently and fold in gradually.
9- Finally, add the raspberries, you can decide yourself how many/little raspberries you wish to add. Add mixture to the base and chill in the fridge for at least three hours.
10- Sprinkle with additional raspberries or dashes of white chocolate and lime rind. Good served as it is but to give it a sharp edge and a more complete dish serve with a raspberry coulis.
- Make a quick coulis by sieving fresh berries with a little sugar, a thick glossy syrup can be made by heating fruits and sugar then passing through sieve.
- Want a healthier cheesecake?  Add low fat cream cheese and substitute the cream for yoghurt (may need a couple of tbsp's of icing sugar to sweeten).
- Make it personal by serving in shot glasses or ramekins
- Camera is out of action but once it is fixed will get some pics up of finished dishes
